Today is Pancake Cake. Did you honestly think we were going to let this yummy day slip by without making it even more inviting?
Yes. You guessed it. We’re making gin and tonic pancakes. Here’s how you can do it too.
- Juice of 1 orange
- Orange zest
- 3tbsp sugar
- A good glug of NB Gin
- 150ml of Fever-Tree tonic
- 200g self-raising flour
- 1 egg
- 50ml milk
- knob of butter
For the orange zest topping:
Peel the zest from an orange and curl the zest around a cocktail stick.
For the gin and tonic syrup:
Squeeze the orange juice into a pan and add the sugar and NB Gin. Boil the mixture for three minutes.
For the NB Gin and tonic pancakes:
Place the flour in a bowl and add the egg and Fever-Tree tonic. Whisk the mixture until smooth.
Melt the butter in a pan and spoon the pancake mixture to make small pancakes.
Once ready (golden brown and smelling delicious), stack the pancakes on a plate and drizzle over the NB Gin and tonic syrup over the top.
Decorate with the orange zest, before serving.
